Cookstown Greens = so good. The mix of lettuces, herbs, and even flower petals are a delight. I mix with my fave vinaigrette - white wine vinegar, wild honey, sunflower oil, chives and basil - along with a little of whatever else is around (typically flax seed, goat cheese, pear/apple, maybe avocado) for a lovely side.
Oh yeah, and I get them at The Healthy Butcher.

Homemade cherry almond cupcakes. Admittedly, I made these mothers day treats myself - I adore baking, honest! I used the classic vanilla from Vegan Cupcakes Take Over the World (despite no longer being vegan, these recipes remain my top picks) with cherry bits and almond extract. The frosting is a simple almond buttercream and the cherry gets popped on top. Easy-peasy!
